Muso Oita Dried Shiitake Mushrooms (Large Donko), 45 g
¥3,950
Log-grown (genboku) shiitake from Oita Prefecture, harvested as donko: thick, rounded caps picked before they open more than about 70 percent, then dried slowly. Rehydrated, they add umami and a meaty bite to soups, simmered dishes and mixed rice, and the soaking liquid makes a plant-based dashi.

How to use
Rinse briefly, then soak in enough water to cover until the thick part is soft and springy. For the best flavor, soak in cold water (about 5°C / 41°F) for about 10 hours; if in a hurry, use lukewarm water, not hot. Keep the soaking liquid to use as dashi or soup stock.
