Shiitake
Muso Oita Dried Shiitake Mushrooms (Koshin), 80 g
¥5,050
Log-grown shiitake from Oita Prefecture, harvested as koshin: picked after the caps open, so they are thinner and flatter than donko. They are sun-matured before drying. Rehydrated, they suit chirashi sushi, mixed rice and stir-fries, and the soaking liquid can be used as dashi.

How to use
Rinse briefly, then soak in enough water to cover until soft and springy. For the best flavor, soak in cold water (about 5°C / 41°F) for about 5 hours; if in a hurry, use lukewarm water, not hot. Keep the soaking liquid to use as dashi or soup stock.
