Katsuo (Bonito)
Ninben Honkarebushi Bonito Salt (Katsuo Shio), 45 g
¥2,530
A tabletop seasoning salt of honkarebushi (fully cured, mold-aged bonito) and Okinawan sea salt from Ninben, a katsuobushi house founded in 1699 in Nihonbashi, Tokyo. The bonito is coated with a special process that limits oxidation and moisture absorption, so its freshly shaved aroma lasts after opening. A small amount adds a clear bonito accent.
